Citrus Roast Chicken

What You Need

  • 1 Whole Free-range Chicken
  • 3 oranges
  • 1 grapefruit
  • 2 red onions, roughly chopped
  • 4 medium sweet potatoes
  • 100g butter
  • ¼ cup olive oil
  • Small handful of thyme
  • Salt and black pepper

What To Do

Preheat the oven to 180’c. Roughly chop all your citrus and place into a roasting dish big enough to fit all the ingredients together with the whole chicken. Add the roughly chopped red onion and sweet potato. Place the chicken on top of all the citrus and veg.

Dot knobs of butter on the chicken and around it. Drizzle generously with olive oil, add sprigs of thyme and season with salt and pepper.

Place in the oven and roast for 60 minutes until cooked through. Half way through the cooking time, at 30mins, you can take the chicken out and baste with the pan juices.

Once the chicken is golden and cooked I like to drizzle the veg with a hint of honey to take the bitterness off the citrus peels, or simply eat the flesh out of the citrus and leave the peel if it tastes too bitter for you.
