Hot Cross Bun Scones

What You Need

  • 400g cake flour
  • 50g castor sugar
  • 15g baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp all spice
  • 125g raisins
  • 415g cream
  • 55g honey

What To Do

Preheat your oven to 180’c. Combine and mix the flour, sugar, baking powder, salt, spices and raisins and mix. Then make a well in the middle of the flour and pour the honey and cream in and mix until the dough just starts to come together. Be careful not to overmix, it doesn’t need to be a perfectly smooth dough. Turn dough out onto the table and push the dough together until it forms a rough circle (about 2 & half fingers tall – measuring ingredients is important but lets be honest no one is bringing out a measuring tape to work out the height of a scone). Cut out circles using a cookie cutter (You can also freeze the scones at this stage before baking). Place on a tray lined with baking paper and bake for 22-25mins (they should look slightly golden and a little flaky). Top with whipped cream cheese.

*Whip room temp cream cheese with a little honey and a touch of milk or cream
