What To Do
Boil the potatoes until just soft but not falling apart. Preheat the oven to 180’c.
Tumble onto a roasting tray lined with baking paper and crush using a fork. Dot small pieces of butter around the potatoes, sprinkle with fennel seeds, seasoning and drizzle with honey.
Roast the potatoes for 30-40minutes or until golden and crispy. Once cooked sprinkle with freshly grated parmesan and enjoy.
