Oat and Orange Glazed Mini Scones

Baking Time: 20-25 minutes
What You Need:
- 2 ½ cups flour, sifted
- 1 cup oats, finely processed
- 3 ½ tablespoons castor sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 450ml cream
- 3 tablespoons honey
- 50g butter
- ¼ cup orange juice
- ½ cup sugar
- ¼ cup cream
- 1 orange, sliced for topping
What To Do
- Preheat the oven to 180’c and triple line a baking tray with baking paper.
- Combine all the dry ingredients and mix well. Add the honey to the cream and mix. Combine the dry ingredients with the wet ingredients until a dough comes together. Careful not to overmix the dough.
- Pat down the dough on a lightly floured surface to 3cm thickness and cut into 8-10 circles. Place on the lined baking tray, top with a slice of orange (pressing in gently to set the slice on top) and bake for 20-25minutes.
- To make the glaze, in a saucepan, add the butter, orange juice and sugar and heat until melted and bubbling. Remove from the heat, add the cream and mix. Allow to cool slightly.
- Once the scones are baked, place on a wire rack and allow to cool completely, before drizzling with the glaze.
* Once you’ve cut out the scones, you can freeze them at this stage and have them ready to go for whenever your scone craving hits. When baking, just bake from frozen from 25-30 minutes.
