Quick Vegan Pea Pasta

Serves 4


  • 1 red onion, sliced
  • 12 baby marrows, chopped
  • 1 tin peas
  • ½ tin coconut milk
  • 1 garlic clove, finely grated
  • 1 packet pasta of choice, cooked
  • ½ lemon juice
  • 1 cup frozen peas, heated


Fry the red onion and baby marrow in a little oil until soft. Remove from the pan and set aside.

Blitz the tin of peas with half a tin of coconut milk and seasoning until smooth. Pour into the same pan you just had the onion and marrows in. Add the garlic and heat through for 3 mins. Add the cooked pasta and stir well.

Divide onto 4 plates and top with red onion, marrows, peas and a squeeze of lemon juice and enjoy.

*I use petit pois peas (baby peas) and pop them in a bowl and pour boiling water over them.
