What You Need

  • 2 garlic cloves
  • 1 red chilli
  • 1 green papaya, shaved
  • 2 carrots, shaved
  • 1 tablespoon palm sugar
  • 1 tablespoon fish sauce
  • 1 cup cherry tomatoes, halved
  • 3 limes, quartered
  • ¼ cup peanuts, toasted

What To Do

Crush the garlic cloves and chili in a mortar and pestle. Add the palm sugar, fish sauce, lime juice and half the peanuts and crush.

Add everything from the mortar and pestle into a ziplock bag, together with the tomatoes and bash with a wooden rolling pin.

Then add the shaved green papaya and carrots and bash a little more.

Tumble into a bowl and serve with more limes and the remaining peanuts.
