Bobotie-style Breakfast Bagels

What You Need

  • 6 store bought bagels (fresh or frozen)
  • 350 g ground beef mince
  • 1 onion, chopped
  • 1 carrot, grated
  • 1 bay leaf
  • ½ tsp cinnamon
  • ½ tsp cayenne pepper
  • 1 tsp turmeric
  • ½ tsp ground ginger
  • 1 tsp mild curry powder
  • 1 garlic clove, minced
  • 2 tbsp vinegar
  • 1 tbsp chutney
  • ½ cup raisins and sultanas
  • 6 eggs

What To Do

Fry the onion with a little oil until golden brown. Add bay leaves, spices, garlic, vinegar and chutney and mix. Then add the grated carrots, raisins, sultanas and mince and mix well. Add a little hot water to the pan to make it extra saucy. Continue to cook for 10mins or until the mince has cooked through.

While the mince cooks, pop the bagels in the toaster and boil the eggs. Cook the eggs until hard boiled. Butter the toasted bagels and top with bobotie mince. Top the bagels with boiled egg slices and enjoy your breakfast with a fresh cup of coffee.
