Crunchy Peanut butter Slaw
Serves 4

What You Need
- 500g (1 bag) tenderstem broccoli, chopped
- ¼ purple cabbage, shredded
- 6 medium carrots, grated
- 1 packet instant noodles, crushed
- ¼ cup sesame seeds, toasted
- ¼ cup sliced almonds, toasted
- 3 tbsp peanut butter
- 2 tbsp mayo
- 1 tsp sesame oil
- 1 tbsp ponzu or soy sauce (I like to use ponzu as its citrus sweetness add great flavour but it’s often not that accessible, in which case simply use soy sauce)
- 2 limes, juiced
- Salt and pepper



What To Do
Combine the sauce ingredients in a large serving bowl and mix well. In the same bowl add the broccoli, cabbage, carrots, crushed noodles, seeds and almonds and mix. Enjoy!
