Crunchy Peanut butter Slaw

What You Need

  • 500g (1 bag)  tenderstem broccoli, chopped
  • ¼ purple cabbage, shredded
  • 6 medium carrots, grated
  • 1 packet instant noodles, crushed
  • ¼ cup sesame seeds, toasted
  • ¼ cup sliced almonds, toasted
  • 3 tbsp peanut butter
  • 2 tbsp mayo
  • 1 tsp sesame oil
  • 1 tbsp ponzu or soy sauce (I like to use ponzu as its citrus sweetness add great flavour but it’s often not that accessible, in which case simply use soy sauce)
  • 2 limes, juiced
  • Salt and pepper

What To Do

Combine the sauce ingredients in a large serving bowl and mix well. In the same bowl add the broccoli, cabbage, carrots, crushed noodles, seeds and almonds and mix. Enjoy!
