Banana, Bran Breakfast ‘Pudding’
Serves 6
What You Need
- 1.5 cup oat flour
- 1 cup bran flakes
- 1 tsp cinnamon
- 2 tsp baking powder
- ½ cup mashed bananas
- ¾ cup buttermilk
- 2 eggs
- 2 tbsp maple syrup
- 2 tbsp vegetable oil
For the sauce:
- ¼ cup maple syrup (for an affordable alternative use maple flavoured syrup)
- ¾ cup warm water
- 75g butter
What To Do
Lightly butter a giant muffin tin and preheat your oven to 180’c. Combine the sauce ingredients and pop in the microwave until the butter has melted and then set aside.
Combine the oat flour, bran flakes, cinnamon and baking powder and mix. Make a well in the centre of the dry ingredients and add the mashed bananas, buttermilk, eggs, maple syrup and oil. Mix all the ingredients together until well combined. Divide the mixture into the 6 muffin holes. Then gently divide and pour the sauce over each breakfast pudding. Gently place in the oven and bake for 20-25mins until a toothpick comes out clean when inserted.
Enjoy the ‘puddings’ with the yoghurt and extra bran flakes sprinkled over.
