Coffee Marinated Pork Ribs
Step 1 – What You Need
- 1/2 cup spice rub (your favourite – mine is a BBQ meat rub)
- Olive oil
- 2 racks of pork ribs
Step 2 – What You Need
- 2 cloves garlic, grated
- 2 limes, zest + juice
- 1 thumb-sized ginger, grated
- 1/2 cup tomato sauce (ketchup)
- 1/2 cup cold brew coffee
- 1/4 cup sriracha sauce
- 1/4 cup hoisin sauce
What To Do
Preheat the oven to 150’c. Line a baking tray with foil and place a cooling rack on top. Lay the ribs on top of the rack in a single layer. Drizzle over a generous layer of olive oil and rub in the spices over the top and bottom of the ribs. Cover with foil and roast in the oven for 2 1/2 hours until the meat is tender. Remove from the oven and allow to cool.
While the ribs cool make the marinade. Mix all the ingredients together, place the ribs in a dish and pour over the marinade, or place in a resealable bag, and marinade overnight.
To finish the ribs – preheat the oven to your highest grill setting. Grill for 10-15 minutes in the oven turning occasionally and basting constantly with the marinade. Alternatively place on the braai or barbecue.
