Summer Sandwich Quick Chicken and Cheesy Polenta Dinner What You Need 1 cucumber 4 slices white bread ½ tub cream cheese 100g smoked salmon, roughly chopped ¼ red onion, finely diced 1 teaspoon dill, chopped 1 teaspoon red wine vinegar Salt and pepper What To Do Steps: Mix everything but the bread and cucumber together. Set aside Spread cream cheese on thee outsides of the bread. Using a potato peeler, peel long thing strips of cucumber. Cut to match the size of the bread and stick on the cream cheese side Spread the filling on the inside of the bread that doesn’t have cream cheese. Close the sandwich and cut the crusts off.
